Pennsylvania Dutch Potato Stuffing

1 medium onion, chopped                 3 cups cooked mashed potatoes 3 celery ribs          1/2 tsp. sage 5 Tbsp. butter                1 Tbsp. dried parsley
4 slices whole wheat bread, torn into pieces

Preheat oven to *350. Saute onion & celery for 5 minutes. Remove from heat, stir in bread then the rest. Put in medium size greased casserole dish. Bake uncovered for 1 hour, till top is light brown and crispy.
